Because ffmpeg already makes files that are fine on an iPod - it's just
the new "Low Complexity" Baseline Profile H.264 playing iPods that have
the issue?
I'm not wedded to the format name and will happily change it. I thought
it would be less confusing to be more specific, but I guess the output
of -formats could explain the finer details.
