RPMfusion provides ffmpeg for RHEL and CentOS as well.

If Gallery happens to work with old versions of ffmpeg:
http://ftp-stud.hs-esslingen.de/pub/Mirrors/rpmfusion.org/free/el/updates/6/x86_64/
(replace 6 with 5 for CentOS 5)
Beware that you will need to download the dependencies as well.

You can also add the RPMfusion repository to your CentOS setup:
http://ubuntupop.blogspot.de/2012/10/how-to-add-rpm-fusion-repository-on.html
and then use "yum install ffmpeg" or some other package tool. (This
will solve your dependencies automatically.)
