All three work correctly under FreeBSD:

> $ ffmpeg -y -i ../hè.mkv -t 60 -pass 1 -passlogfile hè hè.ts >/dev/null 2>&1 && ls -l
total 1
-rw-r--r--  1 tom  wheel   202078 16 Oct 09:05 hè-0.log
-rw-r--r--  1 tom  wheel  5054756 16 Oct 09:05 hè.ts
