When I tried this the first "encoder         : La.." did not get
replaced, only the second one.

I also tried -metadata encoder="Apple ProRes 422 HQ" and that made no
diffrence either.

In my case I was using codec copy, so I was simply trying to represent
the original coder, rather than just the muxer....
