You said yourself you are "not happy" with the current scheme.
Imagine if each (de)muxer had a few parameters.  The
AVFormatParameters struct would soon become quite unwieldy, and
changes to a single demuxer could have global effects, possibly
needlessly breaking binary compatibility.
