 Are there any more options that I need to use to keep FF* from hiding
 stuff from me or silently changing things?

 Gyan Doshi clued me about '-copyts' and '-muxdelay 0'. Now you have clued
 me about '-flags2 +showall'. Are there any others that you know about?

 Knowing what's actually in videos is really important to me.
