What I found so far, is
cat *.png | ffmpeg -c:v png -f image2pipe -r 10 -i - -y test.gif
doesn't work, but
cat *.png | ffmpeg -c:v png -f image2pipe -r 10 -i - -y test.avi
does the trick - AVI file is created.
So perhaps there's something to be specified for GIF output explicitly?
