You can tell ffmpeg to "overwrite" them by using "-y". It should just
reuse them, not actually delete them and replace them with files.
(Works for me.)

In theory, you should be able to do
$ ... -f wav pipe:3 -f wav pipe:4 3>fifo1 4>fifo2

but I didn't get this to work.
