[FFmpeg-user] How do you keep all video metadata when transcoding using ffmpeg?

Consider
	- Always retaining camera originals
	- Extracting the metadata using ffmpeg and maybe exiftool and capturing that either in matching-named sidecar files and/or in a media asset manager.
